How long should I acclimate the floor before I install it? And more importantly do I really need to do this? It seems a bit overkill.

Well lets put it this way. I live in the Northwest and I had a piece of transition that I cut to a perfect glove fit which was only 3' and was acclimated. Before I got it installed someone put it out in the cold garage and by the time I got it back into the house the next day it was at least a 1/2" short. So imagine that across an entire floor. Most manufacturers have a minimal required acclimation minimum. This will vary not only by manufacturer but also by product. Many installers will just leave the product for a set period of time which may be longer than needed (which is fine) and yet sometimes may not be enough. Some is still better than none. I can't tell you how many technical product reps I've talked to that state few acclimate their floor which may void a warranty. Best practice is to just take the time and do it.

I recomend installing your flooring after acclimating it in the freezer. He he he!

every flooring install weather it be laminate or hardwood is almost a must when it come,s too acclimating when in doubt keep the flooring in the room its going too be laid in on a little bit lower heat then what the norm room temp. will be then leave it for 12 too 24 hr,s this takes care of acclimation and makes sure your flooring turns out good

Remember aclamation includes temp being at 21 degrees at 45to 55% humity based on where you live is also a factor.Laminate contracts and expands very minimal based on sub straight.The manufacture tells you the instructions on the product you buy .I live in BC in the okanagan and the temps i find that work well here are the ones i posted.hard wood i like to get in the house 3 days prior to install.
